After scarfing down the bbQ chicken pizza, MB still needed som nutrients. He was having a surgical procedure on his belly and couldn’t have food after midnight — so I kept pumping him full of healthy KCals to avoid being too hungry the next morning. I made him a delightful and easy smoothie!

Day three was one of the tastier days and the fastest by far with my BBQ chicken pizza!

As mentioned Day 2′s dinner was a smidge rushed because we had something to celebrate. Our 1 month wedding anniversary.

Our second homemade day was in celebration of something extra-special. To honor our celebration, I was a little more rushed with the main course than I would have liked. I love Mexican food so I started the celebration off with some homemade Mexican lasagna.

As you’ve heard, I’m making MB dinner every night for a week. Let’s get right to it with some stuffed peppers, shall we?

This week, as part of my 1001 things project training, I’m attempting for 7 straight days, to cook tasty, healthy-ish meals for me and my HuzBand. Here is what will successfully result in a check mark next to a tasty, healthy-ish meal:
This week, I’m going to cook and document and hopefully be accepted as a guest blogger over at my FAVO food blog, Incredible Crunchy Flavor. So in the meantime, here is a great start to a semi-homecooked week.
On Sunday, I invited my best girls from the Old Town Book Club over to reconnect since I lamed on life after the wedding and missed our last meeting. We played Scrabble and noshed on what I thought were some pretty tasty snacks.
