A Homemade Week: Day 2

Day 1

Our second homemade day was in celebration of something extra-special.  To honor our celebration, I was a little more rushed with the main course than I would have liked.  I love Mexican food so I started the celebration off with some homemade Mexican lasagna.


From my own brain:

1 package of 8 whole wheat tortialls
1 heaping cup of your favorite jarred or homemade salsa
1/4 Velveeta Cheese loaf, cubed
1lb ground turkey
1/2 pouch of taco seasoning
1 c water
1 can black beans
1 can whole kernel corn
1 cup shredded cheddar/jack cheese

Heat oven to 425.  Start by tearing or cutting the tortilla into strips or half moons or whatever you want to do and put in the bottom of a well greased 13×9 pan.


Brown your ground turkey.  In a separate bowl mix water and taco seasoning.  Pour over ground turkey to simmer for about 3 minutes.  Remove from heat.


Neither my hubsy nor our dinner guest eat beans, so I had to make the beans into a paste ala our food processor.  You can choose to skip this if those that dine with you are food adventurous.  Either way, combine beans, corn and salsa into a large mixing bowl.


Cube Velveeta.


Mix the cooled ground turkey with the bean, corn and salsa mixture and layer on top of the tortillas in your baking dish.  Top with half of the cubed velveeta.  Tear/cut additional tortillas to create another layer.  Then add the bean and ground turkey mixture and another layer of Velveeta.  Finish by tearing/cutting the remaining tortillas.  Top with left over Velveeta, shredded cheese and salsa {if you’d like}.  Cover with foil and bake for 25 minutes until the top is bubbly.


Let stand for about 10 minutes before serving.
