Hot Artichoke Dip

Christmas is a time for giving, yes? A time for being selfless and helpful and cheery. Well, the truth of the matter is I’ve not been ANY of those things for the last 18 days. Actually I think I’ve been exactly the opposite of all of those things. Sorry.

So, to that end I thought I’d let you in on one of my newest and best secrets. The Pioneer Woman’s Hot Artichoke Dip.  Run, do not walk, to your nearest grocer and buy these ingredients.  This dip will keep you warm during the “snow storm” and happy that you are alive.


Freaking amazing.  Shall we?

Adapted from the Pioneer Woman’s Hot Olive and Artichoke dip

  • 2 14 oz cans Artichoke Hearts, drained
  • 8 oz, Cream Cheese
  • 1 cup (real) Mayonnaise
  • 1 small white onion, chopped
  • Dash of garlic powder to taste
  • 1 cup Grated Parmesan Cheese
  • Cayenne Pepper to taste
  • Dash of freshly ground salt and pepper
Preparation Instructions

Combine  1 can of artichoke hearts and all other ingredients in the bowl of a food processor. Pulse 5 to 8 times until mixture is combined but not totally liquefied.   Chop remaining can of artichoke hearts into bite sized pieces.  Stir mixture and chopped artichoke hearts together and check seasonings, then pour into a casserole dish. Bake at 350 degrees for 20 to 25 minutes, or until hot and bubbly.

Serve with tortilla chips, pita bread, veggies, a spoon…

Seriously the leftovers make a DEFREAKING-LICIOUS sandwich spread.  Happy weekend!!
